2 MISSION Plain Pita Breads

400g steamed baby potatoes, thinly sliced

50g baby rocket leaves

1 tbsp olive oil

1 tbsp lemon juice

Salt & freshly ground black pepper, to taste

200g smoked salmon, thinly sliced

200g light cream cheese
-
2 tbsp chopped dill
-
1 tbsp wholegrain mustard

2 tbsp caster sugar

Step 1
Place MISSION Pita Breads on a plate lined with paper towel and heat in a microwave for 40 seconds. Using a serrated knife, cut in half and form a pocket in each half.

Step 2
Toss the potatoes, rocket, oil and lemon juice together and season with freshly ground pepper and salt. Fill pita pockets with salmon and potato salad.

Step 3
Combine cream cheese, dill, mustard and sugar and drizzle over the smoked salmon. Serve immediately.
