Ingredients

1 Mission Plain Naan

4 prawns shelled and deveined

2 tsp meat curry powder

1 tsp ginger, minced

1 tsp garlic, minced

3 Tbs greek yogurt

4 cherry tomatoes
-
¼ onion, chopped
-
1 handful cilantro, chopped

Salt & pepper

Olive oil

1 handful feta

Step 1
Mix 1 tsp curry powder, 1 Tbs yogurt, ginger, garlic and salt and pepper to taste to form a paste.

Rub this paste on the prawns to marinate for 20mins.

Halve the cherry tomatoes and toss with some olive oil and salt.

Step 4
Put the tomatoes and the prawns on a baking tray.

Step 5
Bake in the oven at 170C till cooked through and the tomatoes are caramelised.

Let the prawn cool slightly and cube / leave whole.

Mix the remaining 1 tsp of curry powder with the 2 Tbs of yogurt and season with salt and pepper.

Spread this onto the naan then top with onion, prawns and caramelised onions.

Sprinkle with a few feta cubes and bake till just heated through.
