Chicken Rendang Wrap with Green Mango Salad

2 Mission Supersoft Onion & Chives Wrap

1 chicken breast
-
1 pkg rendang spice mix
-
1 handful lettuce
-
2 Tbs lime juice
-
2 Tbs fish sauce
-
1 tsp brown sugar
-
1 green mango, cut into strips
-
1 scallion, thin strips
-
¼ cup cilantro, chopped
-
¼ cup mint, chopped
-
2 Tbs peanuts
-
½ tsp red pepper flakes

Instructions

Step 1
Cook the rendang as per package instructions.

Step 2
To assemble wrap put on the lettuce then top with some of the rendang and wrap up.

Step 3
In a large bowl whisk together lime juice, fish sauce, and sugar until sugar dissolves.

Add mangoes, scallions, cilantro, and mint and toss to coat.

Taste and adjust seasoning with additional lime juice, fish sauce, and sugar as desired.

Top with chopped peanuts and red-pepper flakes.
